A “3% brine” can mean two things

Salt ÷ water3%
Salt ÷ (water + salt)2.91%

Both percentages describe the same salt-and-water mixture.

Before you mix

A calculation, not a preservation recipe

Use a tested recipe for your food and process. This tool calculates ingredient amounts; it does not determine safe curing time, refrigeration, acidity, smoking conditions or shelf life. Plain salt and nitrite curing salts are not interchangeable.

Check the scaled batch with a reverse calculation

Start with 2,000 g water and 80 g salt: the water-based ratio is 4%. A scale factor of 1.5 produces 3,000 g water and 120 g salt. The reverse check is 120 ÷ 3,000 × 100 = 4%.

Scale each ingredient included in your selected basis. The tool models water, plain salt and optional food; it does not scale sugar, spices or other ingredients for you. Keep their proportions according to the full recipe, and do not scale treatment time automatically.

Multiply quantities by the same factor

A batch with 1,000 g water and 30 g salt becomes 2,000 g water and 60 g salt at a factor of 2. Its percentage stays 3% relative to water. At a factor of 0.5, it becomes 500 g water and 15 g salt.

Choose Food + water if your recipe includes food in the ratio. In that mode, the calculator scales the entered food mass as well.

Find a scale factor from your available water

Divide the water you want by the original water amount, using matching units. To make a 750 mL water batch from a recipe with 1 litre water, the factor is 750 ÷ 1,000 = 0.75. A recipe with 30 g salt therefore scales to 22.5 g.

Do not compare litres directly with gallons. Convert them first, or let the water-unit selector convert the entered amount.

Scaling ingredients does not scale a process

The calculator scales water, plain salt and optional food only. Scale sugar, spices or other ingredients separately as directed by the recipe. Treatment time, container size and heating or cooling steps do not necessarily change in proportion to ingredient mass.
